Ingredients:
– 2 cups almond flour
– 1/2 cup coconut flour
– 1/4 cup tapioca flour
– 1/2 cup coconut sugar
– 1 tsp baking soda
– 1 tsp baking powder
– 1 tsp cinnamon
– 1/2 tsp nutmeg
– 1/2 tsp allspice
– 1/2 tsp salt
– 4 eggs
– 1/2 cup unsweetened applesauce
– 1/2 cup coconut oil, melted
– 1/4 cup maple syrup
– 1 tsp vanilla extract
– 1 cup chopped walnuts
– 1 cup chopped dried fruit (such as raisins, cranberries, or apricots)
Method:
1. Preheat your oven to 350 degrees F (180 degrees C) and grease a 9-inch (23 cm) cake pan with coconut oil.
2. In a large mixing bowl, whisk together the almond flour, coconut flour, tapioca flour, coconut sugar, baking soda, baking powder, cinnamon, nutmeg, allspice, and salt.
3. In a separate bowl, whisk together the eggs, applesauce, melted coconut oil, maple syrup, and vanilla extract.
4. Add the wet ingredients to the dry ingredients and stir until everything is well combined.
5. Fold in the chopped walnuts and dried fruit.
6. Pour the batter into the greased cake pan and smooth out the top with a spatula.
7. Bake for 40-50 minutes, or until a toothpick inserted into the centre of the cake comes out clean.
8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
